Kashk o Bademjan (Eggplant Dip)
Sauteed eggplants served with kashk (yogurt whey), caramelized onions, garlic, and mint.
Diced cucumber, tomatoes, and onions served with mint, fresh lemon juice, and olive oil.
Blended garbanzo beans, tahini, olive oil, lemon juice, ground cumin, and garlic. Topped with paprika, sesame seeds, and fresh parsley.
Mix of carrots, cauliflower, celery, cabbage, and garlic, pickled in vinegar & salt.
All entrees are served with saffron basmati rice and a side of freshly grilled vegetables, Aria's cabbage pickle. Substitutions are available.
